Asilia’s Roasted Cauliflower

In our opinion, there is a serious underappreciation for cauliflower. We don’t know why! If you haven’t tried crispy popcorn cauliflower, then your stomach hasn’t lived. Anyway, I digress… Every week, I cook a roast (and a pretty good one I might add). Roasted cauliflower is a staple to that roast. So the question that no one is asking – what recipe do I use? It’s a Hairy Bikers-inspired recipe with an Asilia twist. Here you go:

Timings:
Prep: 10 minutes
Cooking: 30 minutes

Ingredients:

  • 1 large cauliflower, broken into florets
  • 2 garlic cloves, finely chopped
  • 3 tbsps of olive oil
  • 1 lime, zest and juice.
  • 1 tbsps. of turmeric powder
  • 1 tbsps. of Asilia’s Turmeric Ginger Salt
  • 25g/1oz Parmesan (or an alternative vegan hard cheese), grated

Optional:

  • 100g of cashew nuts – I love cashew nuts
  • Chopped Parsley

Step guide:

  1.  Preheat the oven to 180 degrees celcius (fan) or 200 degrees celcius (normal).
  2. Wash and prep an average-sized cauliflower into small chunk-sized florets.
  3. Create a delicious dressing with olive oil, lime zest and juice, turmeric powder, and Asilia’s Turmeric Ginger salt. Thoroughly mix the cauliflower florets with the dressing in a mixing bowl. Note: If you are adding the cashew nuts, do this now as well.
  4. Line a baking tray with a baking sheet.
  5. Place the delicious cauliflower onto the baking tray and place in the red hot oven. Tip: spread the florets out so they caramalise properly.
  6. Roast the cauliflower florets, until they are browned and caramelized, for about 30 minutes.
  7. Allow to cool to cool for 2 minutes before serving. Note: sprinkle the parsley
